I am taking a trip from Longview, WA to Mission Viejo, CA (& returning)
along I-5 with my two children (3 & 9 yo). Are there any letterboxes
near the freeway that we could hunt for and take a short break?

On the road again was perfect! We stopped there on our road trip down
I5 too. It is so close to the highway! Lots of places to eat around
this one too.

There was recently a gathering in Old Sacramento and a number of the
boxes are still in place. & if you want an extended break, there's
lots of history & a working railroad train that you can take about an
hour ride on. Check out www.oldsac.com for more info on everything to
do in Old Sac.
